AHR detects and deals with many environmental toxins, including chemicals in smoke. A recent study of Neanderthal genomes found that one of the few protein-coding changes that has become fixed between Neanderthals and modern humans is in AHR, and weakens the response of AHR to smoke. This could have made cooking food safer for humans vs Neanderthals.
